Fudgy chocolate brownies are an all time favourite. They are delicious, full of chocolate (who doesn’t love chocolate?) and quick to make.
Additionally, they are very easy to transport when you plan to bring them to a party as you can stack them without any issues.

Update from 23.04.2020: We baked these fudgy chocolate brownies again in a 24 x 24 x 6 cm baking pan with the same amount of ingredients and the result was great. They had nearly double the thickness and have been even fudgier. Only the baking time had to be extended by about 10 to 15 minutes.

Depending on the size of the eggs you will have about 1.550 g of brownies.

Very simple and also quick recipe for a more than great result.
Baking tools
A hand mixer, two bowls and a square or rectangular baking pan are needed.
We went for a 26 x 40 x 4 cm rectangular one. Preferably we would go for a smaller one to have thicker brownies, but didn’t have one. We guess that a 24 x 24 x 6 cm baking pan would be better.

Steps
1. Prepare chocolate

- Chop both couverture chocolates in chunks
- Take 100 g of each couverture chocolate and put it aside
- Take the other half, mix it together and melt it
- You can either melt it in the microwave in intervals of 20 seconds until it is fully melted or with a water bath like we did it in our chocolate chip cookie dough easter eggs recipe
2. Prepare baking pan
- Prepare a baking pan by covering the insides with parchment paper
3. Mix – Dough

200 g | Melted milk and dark couverture chocolate |
200 g | All-purpose flour |
40 g | Cocoa powder |
4 g | Salt |
100 g | Milk couverture chocolate chunks |
100 g | Dark couverture chocolate chunks |
- In a bowl mix soft butter and sugar with a mixer until fluffy
- Add the eggs and vanilla extract and mix further till everything is light in color and still fluffy
- Whisk in the melted couverture chocolate but make sure that it is not too hot or otherwise the eggs could begin to set
- Sift in the all-purpose flour, cocoa powder and salt and mix until just combined to be sure that you don’t overmix
- Fold in the couverture chocolate chunks
- Pour the whole mixture in the prepared baking pan
4. Bake
- Preheat oven to 180°C (356°F) for ~20 minutes with the upper and lower heat function
- Put the baking pan in the oven on the middle rack and bake for 25 minutes
- After baking take your finished fudgy chocolate brownies out, but keep them in the baking pan
- Info: If you are going for a 24 x 24 x 6 cm baking pan, then you have to extend the baking time by about 10 to 15 minutes
5. Cool
- Let the brownies cool in the baking pan for about 30 minutes
- Afterwards you can start cutting out pieces and eat while the brownies are still warm or wait until fully cooled
Conclusion
Taste
These fudgy chocolate brownies have a dense top layer. This makes sure they don’t break apart when you stack them or bite into. It is also a nice contrast to the base as the base is very nice and fluffy.
The chocolate chunks we put into the dough are almost liquid if you eat them while they are still warm – but don’t worry: they are still so yummy when they cooled off.
The taste is of course intensly chocolaty and sweet, even though we already reduced the amount of sugar compared to the amount of sugar most other brownie recipes have.
