Can’t decide whether you would like ice cream or cookies as a dessert? Well just take both and make a soft baked chocolate chip skillet cookie!

With this easy recipe, there is no need to decide for one or the other as it is the perfect combination. Some people know this dessert under the names “pizookie” or “pizza cookie”.

You will just love it! Additionally, it is not very time consuming and it tastes best when you eat it while it is still warm.

One big soft baked cookie of 240 g to which you can add as much ice cream as you want. We went for 2 scoops of vanilla ice cream that fit perfectly.

These ratios are for a small cast iron skillet with a radius of about 15 cm. If you have a bigger one, feel free to adjust the ratio of the ingredients proportionally.

Baking tools

Besides a hand mixer and a bowl the cast iron skillet is the most important tool. As already stated, we used a small cast iron skillet with a radius of about 15 cm.

Steps

1. Mix

22 g Butter (melted)
20 g Brown sugar
12 g White sugar
1x Egg
1 g Vanilla extract
25 g All-purpose flour
0,6 g Baking soda
0,5 g Salt
  • Mix all of the mentioned ingredients together with a hand mixer
  • Start with the melted butter, both sugars and mix until creamy
  • Add the egg, vanilla extract and mix further
  • Afterwards add the all-purpose flour, baking soda, salt and mix well until the consistency is like cake batter
  • Tip: Just melt the butter in the microwave

50 g Milk chocolate chips
50 g Dark couverture chocolate
  • Cut the dark couverture chocolate in big chunks
  • Add both chocolates to the dough mix and stir them in with a large spoon
  • Cover the bowl and place in the fridge for 30 minutes

2. Prepare Cast Iron Skillet

  • Grease a the cast iron skillet with butter on bottom and all sides
  • Pour the dough into the skillet and spread it out evenly
  • Optionally you can sprinkle some extra chocolate chips on top

3. Bake

  • Preheat oven to 165°C (329°F) for ~20 minutes with the circulating heat function
  • Put the cast iron skillet in the oven and bake for 20 minutes
  • After baking place the cast iron skillet on a heat resistant surface

4. Cool

  • Let your soft baked chocolate chip skillet cookie cool for about 10 minutes

5. Serve

  • Place 2 scoops of vanilla ice cream on top, serve while still warm and eat with a spoon

This soft baked chocolate chip skillet cookie is just a dream and has all you could ask for: Sweet, soft, it has dough in it and can be combined with ice cream and fruits.

It is warm and cold at the same time, has a soft and creamy consistency so it will just melt in your mouth.

If you don’t like dark chocolate, you could also use white chocolate and combine it with chocolate ice cream instead of vanilla ice cream like we did.
